The Chocolate Collection
The experimental phase involved in the development of a new chocolate is very exciting – from the first moment of tasting a new ingredient or flavour, to deciding which chocolate will complement it best, and finally working out the finer points of the recipe. Then of course, it’s on to the testing and development stage – and there’s no shortage of volunteers for that!!
Each season, and for special occasions, there will be limited edition flavours added to the collections, these chocolates are unique to the occasion and reflect its special aspects. Rhubarb and Ginger
A creamy delicious white chocolate ganache swirled with homemade rhubarb and ginger jam. A perfect representation of February, with tangy rhubarb, and a warming ginger aftertaste.
Passion Fruit Brandy
Seriously dark chocolate enhanced by a unique brandy made on the Isle of Wight with Passion Fruit. A Smooth, soft truffle, dipped in dark chocolate with a coating of rich cocoa powder for a seriously chocolately hit.
Chilli and Caramelised Almond
Smooth and creamy, yet with a little bite! Delicious milk chocolate with chunks of caramelised almond and a delicate warming chilli note at the end.
Lychee and Peony Tea
Made with pure Javan milk chocolate, and an infusion of white tea with lychee and peony petals. This is a floral, slightly caramelly flavour, bringing a taste of the exotic.
Rose Tea
One of our classics, a robust black tea infused with rose petals infused into milk chocolate and a little rosewater. The true romantics choice.
Seville Orange
Seville oranges are only in season for a short time, so to make the most of them we have designed a tangy marmalade with a dash of Bombay Sapphire Gin which combines perfectly with dark chocolate from Papua New Guinea to make a perfect bittersweet chocolate truffle.

Moroccan Mint
Moroccan mint tea infused in a dark chocolate ganache made with Amazonian dark chocolate and with added cocoa nibs for an extra kick.
Perfect for after dinner.
Sherry Soaked Raisins
Juicy Californian raisins soaked in the finest Pedro Ximenez Spanish sherry in a dark chocolate ganache.
Mandarin Spice
Tangy mandarin oranges, cinnamon, cloves and nutmeg in a dark chocolate ganache.
Christmas Berries
Cranberries, Raspberries and Morello Cherries, with mixed spices, citrus, and a little drop of raspberry liqueur all wrapped in a blend of milk and dark chocolate ganache.
Northern Comfort
Caramelised Almonds and pure Canadian maple syrup in a Peruvian dark chocolate ganache.
Fig and Amaretto
Luxurious Sicilian figs soaked in Italian Amaretto and blended with dark chocolate.

Rose Tea A great taste of England, combining two of our most famous characteristics – the fragrant English Rose, and the nations favourite drink. A smooth milk chocolate ganache infused with these flavours gives a fragrant, caramelly and smokey taste.
Ginger A classic combination of dark chocolate with spicy, warming and soothing ginger, using the finest Chinese ginger.
Strawberry and Mint A taste of summer, fresh strawberries and garden mint infused into white chocolate, for a pink-tinged treat.
Elderflower and Gin Another summer classic, fruity elderflowers with a dash of Bombay Sapphire Gin for a fruity, herbal infusion that soaks into smooth dark chocolate for a luxury kick and special treat.
Raspberry Semi-dried tangy raspberries soaked in English raspberry liqueur from Fonthill Glebe in Wiltshire and blended with extra dark chocolate for a rich and classic combination.
Walnut Liqueur and Cocoa Nibs Cocoa nibs have been branded a superfood, but their role doesn’t stop there, they also have a super flavour! Here they provide texture and crunch, as well as a rich cocoa-like flavour, in a smooth dark chocolate liqueur laced with a decadent English walnut liqueur made by Davis Wines.
Earl Grey Tea Quintessentially English, an infusion of the finest blend of Earl Grey tea blended with a smooth milk chocolate ganache to give a very moreish truffle, with a caramelly overtone.
Fig and Amaretto Inspired by many trips to Italy, this combines luscious Sicilian figs with the famous taste of the Italian digestif Amaretto, blended with dark chocolate for a perfect after dinner treat.
Sesame seed and honey A taste of the Middle East, caramelised sesame seeds and honey blended in a dark chocolate truffle to give a bitter-sweet contrast between the luxurious honey and the dark dark chocolate.
Rosemary Based on my award-winning dessert, an unusual infusion of fragrant rosemary into smooth white chocolate, with chunks of soft peach and crunch almond praline. Truly unique, and a special treat.
